Currently on our filter rotation is the Rodrigo Cortez, Tabi. This coffee is produced by Rodrigo Cortez, whose farm is located in San Roque, Huila. Located roughly 40km west of Pitalito in the south of Colombia, this region is where you’ll find most of the best coffees in Colombia are produced.
The lot in which this is grown is 100% Tabi. It’s a new, unique varietal that has been developed by “Federación Nacional de cafeteros” (National Federation of Coffee Growers of Colombia), whereby they’ve crossed the Timor Hybrid, Bourbon and Typica varietals.
The word Tabi means good in the guambiano dialect, which you’ll find is perfectly suited as it has been bred to be a high quality and beautifully balanced coffee. For this lot, strictly only the ripest cherries were picked with the same level of ripeness during the main crop, before being exposed to a wet anaerobic fermentation of 32 hours and shadow dried in parabolic bed to ideal moisture.
This coffee is very sweet and have notes of peach, guava and florals with a lingering sweet finish.
